Socially acceptable or not, you can still do it, but there will be consequences. My dad would tell me he didn't care often when I talked to him as a kid, he still does sometimes when I try to tell him something I genuinely think he'll like, but I rarely try to talk to him anymore.

Saying "I don't care" is a bit rude, but its fairly normal to find some excuse and leave the conversation. Go get a refill or drinks, or say hi to someone else and join their conversation.

I use “actually, sorry, but it turns out I'm not invested enough in this conversation to continue, have a nice day/night” and then walk away. I only use it when the discussion is getting heated though, because I'm tired of strangers starting arguments with me about things like morals and human rights (I'm very obviously leftist and live in an ultra-conservative area, so yes it does happen a lot and no that doesn't make me the asshole).

i care a lot less about social acceptability as I get older. i will be polite once or twice trying to leave a conversation. if I get locked in by the other participant, a firm "oh, excuse me!" then literally just walking away is the last step.
