I think it's a combination of the 'we use this trough for everyone all day' and the fact that the name is really similar to 'semen,' but this sounds highly unappealing.

It is unappealing. I would not eat at a place like that. Some do have separate chopsticks for catching the somen (long o, so probably sounds less like semen than you might think), but it's still not great. I have seen it at family events as well.

Lol, people don't spittle into the shoot, plus it's constantly washed by the flowing water.
Definitely not pristine, but it's really not an issue unless you make it to be.

That's how these noodles are prepared, they're run through cold water and served cold. The novelty here is it flows through a trough to you, instead of chilled out of sight and served.

Have you never tried cold noodles? One of my favorite dishes to make is to cook up some spaghetti, rinse it under cold water, and pour Italian dressing over top of it. It's refreshing and filling.

Because there’s tons of hella tasty cold food out there. Just seems odd (not to mention, impractical in a lot of cases) to refuse to consume cold (by which I mean “not heated”) food. Like, do they also refuse to touch sandwiches? Salads? Crackers? Or for Indian fare (as they said they were in India): chutneys, chaat, koshimbir, dahi puri/papti/bhalla, or dhokla, just to name a handful?

I haven't. All Japanese restaurants where are I live are prohibitively expensive. Not all of us live in US.

For all everyone is defending them yes I’m sure many people like them. That said, I accidentally ordered cold udon in Japan and it was unpleasant. I like cold foods of some sorts, but cold udon was something I intend not to have in the future if I can

I heard of this somewhere around a couple years back and it just sounds like an absolute hassle to do. Especially since, despite using chopsticks for over a decade, I still am not the greatest with them.
