I am a basic person and love me some granny smith green apples.
Pink Lady is the perfect blend of sweet/tart.

Sugar bee is good but expensive
Likely Elstar, Fuji, Pink Lady or similar. I like the sweeter apples, not a big fan of eating the green varieties as-is, but do love them in salads or other cooking.
Speaking of apples, if you're into mad chemistry you might enjoy NileRed recreating the Grapple (discontinued apple infused with grape flavour).
