PineTime is probably the best choice privacy wise. It hits all your requirements but it is definitely not fancy. Pretty much everything will require an app, but the GadgetBridge app is FOSS with no trackers or uploading your data.
I can agree with that. As much as I'd prefer pressing the "delete all Ai in the world" button, it has some uses and doesn't have to be predatory.

This is crazy to me. I would have gone insane as a child if I couldn't have imagined badass scenarios in my head when I was bored.
I don't code so correct me if I'm wrong, but wouldn't the code have to be generally accepted, reviewed, and verified by other members of the project? Ai can fuck right off as far as I'm concerned, but this isn't a situation where a CEO just unilaterally decides vibe coding is the move. Unless I'm mistaken.

I think that this is good and all for a regular person end user that might want to use it for efficiency. But the main problem OP is stating is that there will be people who will not use it so ethically, and we may not have the ability to "opt out", as it were.
This is a little bit douchey with the wording but not entirely incorrect. Nintendo fans play Nintendo games, and that's usually it. As much as they've gotten better at third party support, it's cheaper to just buy a separate console or PC, which has games go on sale and have it run better. Rather than buying Witcher 3 running sub 30 FPS at full price years after release because Nintendo tax. But if you do that you're not a "Nintendo guy". You're just really onto video games, so BoTW won't surprise you.
Similar to how Apple repackages features. If you use Apple products you're usually either a tech guy or an Apple guy. The tech guys have a healthy respect for Apple but don't appreciate the repackaging and business practices. The Apple guys are impressed, because Apple facilitates being locked into their ecosystem, and therefore they've never seen it.
