Recipe from The Perfect Loaf

I halved the batch, used bread flour instead of AP flour, subbed in about 20% whole wheat, and kneaded by hand instead of with a mixer. They came out well.

I didn't really think so, to be honest. The cinnamon filling overwhelms the other flavors, and the ratio didn't seem high enough to affect the mixing, kneading, or rising noticeably.

Oh those are gorgeous. I make a double batch of this same recipe at Christmas every year.
