Well, as you mentioned, Bethesda games in general. I always mod Elder Scrolls and Fallout games to a ridiculous degree. But some more:
Star Wars: Knights of the Old Republic has a great modding scene. I personally find "Start as a Jedi" essential for replays. And most of the mods (including that one) work on the excellent Android port.
Also, I love randomizers. I do a Symphony of the Night randomizer run at least 4 or 5 times a year, the Super Metroid x Link to the Past combined randomizer is amazing, and I'm finally going to dip my toe into Dark Souls randomizer soonish.
Is there are Kotor or Kotor 2 mod that... kinda takes a lot of the grinding out of it? There's so much I find appealing and have enjoyed about those games, but these days I just don't have the patience for their slow pacing with the simple combat.
I'd assume it's just lost to me though, which is alright - I've got lots to play otherwise.
If I'm gonna spend hours upon hours in RPG fights, it's almost always gotta be either a great action system or, better, a great turn-based tactics system (brb, must go hug Divinity Original Sin 2 again).

There's basically a mod for everything. If you just want to play the game on easy to enjoy the roleplay and story, use the save editor and give yourself godly stats.
