horse is good eating. good for the climate too, since horses require so much maintenance. if we eat'em, they're gone.

There's an awkward open secret in the UK.

The new forest has a significant 'wild' pony population. More than the forest can support over winter. The excess is gathered up and sold. While some are brought as riders, most are sold to france. On a completely unrelated note. France has no problem eating horse.

there's a smoked horse sausage here that's great. it's very different than beef or pork so it can't be used in the same way, but it's very good.

That's what I tried. Long, thin, smoked and dried sausage. It was ok as I said but not better than beef or pork versions of the same kind of sausage. Or boar.

here it comes in two varieties, one is about 10cm across, one about 5 and comes as a ring. don't know how the big ones are made but i assume they are boiled. good sandwich spread.
