Any kind of stir fry was my go to when learning to cook. Grab some cheap protein (chicken, tofu, etc). Toss in a pan with oil and seasonings. Add a couple handfuls of veggies. If you want to add another pan, make some rice and add that to the mix

Brown veggies/proteins in the pot, deglaze, add spices, water, stock, thickener, drop in any dumplings and let it sit and simmer. You can freeze some of it, depending on how much you care about texture.
