Seconded for US Mobile. Switched to them from Mint Mobile and their offerings of multiple lines based on the existing big three networks is amazing!
I have a Mint line and am considering switching to US Mobile because Mint gets deprioritized hard by T-Mobile in crowded areas. Signal is also weaker in buildings. Was the switch and keeping your number easy?
Trivially easy to switch.
Setup a porting pin with your current provider - this can often be done via the web.
Then go to US Mobiles website and sign up. I'd start with getting a new Sim, then complete the switch over after that Sim arrives. This will make it more seamless. I'm not a fan of esim, but choosing esim can make the transition faster (if your phone supports it). I just don't like having to go through a website to swap phones. With a physical Sim I can setup my next phone, and when it's ready just pop the Sim out, toss it in the new phone, and viola, done.
As for coverage, I see my phone switch between ATT and Verizon all the time, and I have the same dead zones as when I used Verizon.
Keep in mind unless you pay for it US Mobile still claims to deprioritize data as well. But using their Verizon line and ATT lines I’ve never personally experienced it.

If their ToS is unacceptable to you, I guess you could get VoIP service from a SIP provider and just always use VoIP via a VoIP app rather than your phone's native calling support. Just use your telco for data.

I think that it'd be mostly of interest if you really wanted privacy, since you could run the VoIP to a VPN provider, and then the VoIP provider doesn't know where you are physically and your telco knows where you are but has no idea what you're doing (other than talking to your VPN provider).
Plus, while your options are limited as to telcos
there's a natural monopoly from owning the physical infrastructure for a vell network
you have lots of options for VoIP service providers.
In the US, I believe that there may be some (recently-added) restrictions on SIP SMSing.
EDIT: One other thought. If you and your wife have different phone hardware and especially if your hardware is very old, I believe that there's hardware support required for WiFi calling support.

Most of the Apple and Android smartphones we have sold since 2015 support AT&T Wi-Fi Calling. You’ll still need a smartphone with an eligible rate plan for it to work.

My phone is actually newer. I know wifi calling works on my phone because I had it enabled with our previous carrier.
