Me watching people take MCU seriously after endgame 7 years ago in which it became painfully obvious Disney ran out of ideas just like they did with every other franchise they own.

Someone who apparently hasn't watched anything MCU in 7 years trying to convince everyone that there are no new ideas. It's comic books man. I get that it's too lowbrow for you but just let people like things if they want to.
Comics have always waxed and waned. Some of the great storylines in comics happen between some of the worst. Imo it makes sense that the films following this model could do the same, and writing all of the off forever because you haven't been 100% satisfied every time seems silly.
It's okay to not like the MCU, and it's okay to be done with it. But you seem to be suggesting that the MCU was once good in your eyes - why do you think that somebody that has been proven to you to be good once is not capable of being good again?

I was a teen when the very first Spiderman movie came out, and I found it quite entertaining at the time. (Kirsten Dunst might have had something to do with it)
I was also ok with the X-Men and saw Iron Man, which still was okayish but started to feel a bit silly to me.
I've kinda lost interest in those kinds of superhero movies. Sure I kinda liked Watchmen, if only for the great soundtrack, and ofc I've seen the praised Batman Trilogy (Begins, Dark Knight, Returns), I also kinda enjoyed Kickass for being partly a parody of its own genre. But after that era, I've never really felt the urge to watch any of these movies.
What am I missing out on? Which movies do you consider a must see (or at least great entertainment) even for someon who doesn't know a whole lot about the MCU beforehand and has never read a comic book like that?
I mean, don't take this the wrong way, but I don't work for Marvel Studios marketing department so I don't really feel much incentive to sell you. I got no vested interest here, I just thought it was odd that the dude could acknowledge THING could and has been great in the past but while thinking THING couldn't be great again despite the prior acknowledgement. That's all.
That said, I am a comic book diehard and I am also still very onboard with the MCU. I'd say the new Spider-Man is one of my favorite films in the greater universe.... but it's also absolutely not a film you should go into blind. It requires at least having seen the previous Tom Holland Spider-Man films, bare minimum.
But if you're at all interested in the MCU and haven't dipped your toe in yet, my recommendation is simple: Watch Guardians of the Galaxy vol.1-3. These are, imo, the peak of the MCU (GOTG vol.2 is one of my favorite movies of all-time, in fact) and they're also in some ways the most self-contained, so they don't rely on a lot of connective tissue for their impact.

And I think my local library has Guardians of the Galaxy lying around on DVD. So I might actually give those a shot some time soon. Or at least the first one, and see how it goes. And maybe that Spider-Man incarnation. At least he's a character I'm kinda familiar with. I remember playing him in Marvel vs Street Fighter a lot.
The first of the Holland Spider-Man films, Homecoming, is excellent. The only reason I didn't recommend the Spider-Man series to you is because I think the second and third entries are a little shakier, and as a comics fan a bit "more Holland than Peter" to me, but this most recent fourth entry in the series is just as excellent as the first. So if you like the character already, check 'em out.
