I just put it on top of the rice last second. Usually i put horseradish in my mac and cheese, works great there.

I love eating "strange" things, trying out new combinations. This looks and sounds verily gourmet
Sometimes unusual combinations are great, like brie with sushi ginger. I imagine the cottage cheese works well with the spicy hot sauce and horseradish, and the umami of the pork.

Ah but notably it's not that cottage cheese is bad. Just being used where it doesn't belong, like desserts.
It is a cheese after all, and this use, while odd, is a place where other cheese could be fine as well.

Oh no I quite enjoy the description, I've many similar things and enjoy bizarre dishes. I just like hot sauces as well and was curious if it was something interesting or boring.
Not that boring sauces can't taste good, but they are boring to me if I've had them a thousand times: Tabasco, franks, Valentino, crystal, generic Louisiana hot sauce #100000000000.
As an example I'm a huge fan of just about everything Queen's Majesty puts out, or Heartbeat got sauces are always flavour and not just vinegar and heat
Its just cholulah, its my go to for good flavor and medium heat.
