I see a lot of flat mounts where people put a protective acrilic or glass over the dish, or even mount it inside cars under a glass roof. So Im wondering if it would work if I mount it under a solar panel. Solar panels are essentially a thin glass where the diods are assembled. Will those diods interfere with the antena in any way?

Solar panels aren't just silicon. There's also lots of silver wire traces to collect the current. I'm having a hard time looking up typical trace pitch, but I believe it's tight enough to substantially attenuate the bands that starlink operates on.
