I think its more about debloat than apps permissions.
the debloater is a good resource for what system apps do, and whether or not they are actually needed.
Keep the bootloader unlocked and adb enabled in case you mess up.
There are different levels to the approach. I went through each class of ermissions to see which app used them and stopped LOTS. I thought I was going to make my phone useless, but everything works just fine.
I would recommend not touching system apps unless you have a very good reason for doing so. And be willing to risk breaking your device.
