Mods you didn't know you needed till you tried them. Here are some perhaps lesser known UI focused mods that are now must haves:

Pause After Load Unscripted - After loading a game or fast traveling, the screen just pauses until you click something. This is great when loading takes a while and you are looking away/doing something else. No ESP or scripts. SE/AE. Install/test/uninstall whenever.

Media Keys Fix SKSE - Finally a mod that lets you change volume inside the game without the problems of earlier attempts at this! No ESP. SE/AE. Install/test/uninstall whenever.

MainMenu Music Replacer - Wolf Princess (Adrian von Ziegler) (4K) - Celtic Theme - If you are new to the game, don't use this yet. But if you have heard the Skyrim intro many times, this is a breath of fresh air! Beautiful! Replaces the intro song and gives you a nice loading screen. No ESP. SE/AE. Install/test/uninstall whenever.

Flashing Savegames Fix was already mentioned, so instead I'll offer up Main Font Replacement, I use the Magic Cards font and it's one of the mods I always use but always underappreciate.

You also mentioned a music mod, while it doesn't replace the main menu theme and it's not technically a UI mod, I always play with Celtic Music in Skyrim, all tracks are from Adrian von Ziegler I think!
