Starting the hot sauce ferment today eee.
This should be wikkid hot (and hopefully don't get botulism).
It won't be botulism (I don't think) lol the fermentation for hot sauce (and other things) is caused by Limosilactobacillus fermentum (also known as Lactobacillus fermentum).
It can cause Endocarditis; a bacterial infection in/on the heart! Enjoy!

Don't use flip top lid bottles. I had a batch over ferment and Boyo coped it to the face. As did the ceiling.
Owch to the face :(
I might ferment these outside knowing my luck.
