Google is capable of detecting ad blockers, but ad blockers have an incentive to not get detected and will try their hardest to evade Google. The only ones that'll end up guaranteed to be blocked are quick and dirty forks only intended to make a quick buck (which often inject their own ads/trackers). The rest may or may not work depending on who's on top of the cat and mouse game in any given instant.
