It’s the creamy, fatty stuff (like “foie gras” if you will) in crustaceans. For example, the orange fatty stuff that makes shrimp heads so delicious. I never realized there was a name for it!

By the way, there is some concentration of toxins so eat in moderation.

Oh okay so there's a name for that stuff that I always try to eat but can't get myself to like. I have some instinct deep down inside that says monch entire c r a b. But my tongue just won't have it.
