My problem with pineapple on pizza is when the pineapple isn't hydrated enough. Should be juicy. Which also keeps the cheese from drying out too much. One trick is to ask for the cheese on top of the pineapple. This also works for tomatoes. You get these delicious bursts of flavour instead of dry shriveled textures
