I remember having the toy, but I don't know what the broad plot is for Digimon.

like for Pokémon, there's a kid who wants to be the best and collect them all.

what's the Digimon story?

should I be reading the manga or watching the anime or what's like the canon storyline?

He Digivolves into the next stage, like BetelGammamon, and gets more mature and intelligent. After the fight he reverts back to Gammamon and is like a child again.

Digivolution happens on a set scale:
Fresh -> In-Training -> Rookie -> Champion -> Ultimate -> Mega

Most partner Digimon are Rookies. Their bond with their human partner allows them to climb that ladder.

Edit:

Not all Digimon are as child-like as Gammamon. He is especially young for a partner Digimon. Like, Agumon is also a Rookie, but he's more like a teen or young adult. Gammamon is like a 5 year old. As Digimon age they naturally Digivolve, but most of their cognitive development seems to happen during their In-Training and Rookie stages. Fresh are just babies so they don't really do much.

Only partner Digimon can revert. The natural Digivolution is seemingly permanent. I've never seen an episode where a Digimon reverted without a Digivice involved.

A Digivice is a tool that the human partner has. It's what allows the partner Digimon to access higher forms earlier.
