What makes Mexican food in the US so good?

Perhaps the OP comparison is not Mexican food in the USA vs. in Mexico, but rather Mexican food in the USA vs. other food styles inside the USA? In which case Mexican is damn tasty. π
In mean, that one of the top answers in the "What are Europeans not ready to hear" was that Mexican food in the US was better, hence the question.
Of course Mexican food in Mexico should be better, but that seems quite obvious π
Better than what though? Better than Mexican food in Europe? I should hope so, it's closer to Mexico after all:-).

Indeed, but with the big Mexican diaspora in Spain, Mexican food there is definitely a contender!
