Just a fine mince and some tofu crumbled. And you cook it up in a frying pan with taco seasoning just like you would taco meat. At least that's the way I do it 😁 you convince onions in there too or peppers, if you mince anything small enough and put taco seasoning on it it looks like taco meat
The Gardin crumbles are pretty solid too

Making at-home Taco Bell stuff is so great. It’s like the same 5 ingredients can make all these different dishes and by making them at home it’s soooo much healthier. Home made fire sauce is so easy.

Do you have the recipe to share? I saw the pan sheet crunch wrap a few days ago and was trying to convert it to a vegan recipe. Looks like you may have already done it.
I haven't been using a recipe lately, but you can make a similar taco meat with pressed tofu! Crumble it in a pan and add the right amount of oil and taco seasoning, then turn up the heat and get it just a little crispy. I also add green onions fresh garlic cilantro, adobo seasoning chili powder, etc! Chopped up pine nuts can also add a good texture!
