No idea, but you could just go browsing for cool looking projects at flathub or some other repository.
I've come across a few projects that use Weblate or Crowdin for translations. In on of those two you can search for additional projects to translate without having to go trough projects repos. Last one I was checking was probably InkStitch or the ffmpeg webpage.
Pretty much all COSMIC desktop apps have translation support built in (because most of them are built from templates that support them). I'm sure many of them could use your help.
