With a roof, side doors etc. On a bike there is infinite space upwards and outwards.

Yeah but how much of that is useful as opposed to just... there. It's a bike, you're going to struggle to try to get passengers or oversized cargo on it. Having infinite space out to the sides is only helpful if you're especially claustrophobic. Having infinite space upwards only helps if you're too tall for the containment. A bike doesn't benefit from all that space.
