This is unironically almost what a former friend turned conservative while keeping his veganness for some reason recommended for "poor people that are on the hurry and can't buy a salad in a reputable restaurant".
I understand the premise but I would have gone with a meatless patty vegan burger loaded with veggies on a whole grain bun, with sweet potato fries prepared air fried.
You can make a traditionally unhealthy meal highly nutritious with the right know-how.
I mean, it looks delicious, actually... A little small, though.
That menu wouldn't survive for more than a minute.
