Joplin works pretty well.
It's open source and supports markdown. You also have the option to separately encrypt the notes of you want - although this means they can only be read and edited with a joplin app (clients exist for all OS)

Yep. Its not the answer OP asked for, but this is my setup as well. Simple text is stored in Joplin, Nextcloud is for everything else.
Quillpad - it's almost identical to Google Keep.

I use nextcloud notes all the time, has pretty much every feature you'd want from a note taking app except encryption.
