MODERATORS
Mint is my go to herbal tea. Aside from being a great late night tea, it grows like a weed in many places and so you can make your own rather easily!
specifically peppermint
I planted two small, ugly plants in June. By the beginning of August we had so much freaking peppermint we didn't know what to do with it. Would recommend, such an easy herb to get to grow lol

Yeah, we did herbal tea. And we used it in desserts. And in salads. My wife was drinking like 3 virgin mojitos a day at one point lol. Yet there was pretty much just as much left as we could consume without getting tired of mint - and I'm obsessed with mint. We ended up having to give a bunch out haha.

Hang some of that to dry so you have mint all through winter
