Mine does too on the latest Android. Maybe they're using Graphene or something and it's different there?
As a grapheneOS user I csn confirm it does show the bar at the top in screenshoots.
I would love for that to be an option, though. I often edit my screenshots to remove things like the clock in order to help anonymize. Though I understand the goal of GrapheneOS is security, which is not the same as anonymity.
I have a 2025 Moto Edge. It's just running the standard android software I didn't do anything special to it 🤷♂️
