A meat thermometer. Probably the best 20 bucks I ever spent. Completely changed how I cook meat.

Also useful for people that don't cook meat. Just don't get a slow one.

When the box (and instructions) to frozen convenience foods get lost, I use mine to figure out when it's heated through.

I'm going to go a little further - even in the most minimalist kitchens, you should probably have one. Almost no one cooking in a home kitchen especially is going to get very close without it.

These can prevent overcooking meat, which is quite tragic.
